Personally, I'd go for what you and Jane think you can manage mate. Narrowing the categories down might cause a helluva lot more work for both of you.
It's a good 'help' forum and also lets your customers talk and hopefully learn from each other's experience and knowledge. Everybody gets issues with electronics (even the most experienced), but usually someone out there has a suggestion or even a solution.
Keep the categories as limited as you think necessary, and there's always your helpdesk email for particular/bespoke issues.
